Read the powered manual that came with my new 2023 rig. It’s a manual for 2118x.
I’m thinking I might changed it out later for a DC fridge or upgrade that unit if possible with a DC upgrade kit.
My reasoning? It’s 18 deg F outside here in Colorado. It was up to 31 degrees. Fridge/freezer set to 8 out of 9. My ice cream sandwich is still soft. It’s been in there 3 days. Is something wrong with the fridge or is this the best I can expect?

You need some data to measure what your 2118 is doing. I got one of these.

I have a Norcold 2118 and its original cooling unit was terribly undersized. In 100 degree weather my freezer would be 20 and the fridge would be 50. I upgraded to a JC Refrigeration 12 volt dual compressor vapor compression. Today my freezer is rarely above 0 and fridge stays at 33.
I would avoid absorption refrigerators.
I would avoid the 2118, but if you have one I highly recommend JC Refrigeration.

Residential fridge
I went with the Frigidaire, I wanted GE, but was out of stock. My choices was GE, FRIGIDAIRE, WHIRLPOOL, in that order, from a repairman.

My wife and I spend about 6 months a year in Quartzsite boondocking in BLM LTVA, I have 2000 watts of solar and two 300 amp hour LIFEPO4 batteries. When I get up in the morning my batteries are at ~70% SOC. My batteries reach full charge almost every day. So I'm using about 200ah a night.
This last summer I left my converter turned off and at the time I had 600 watts solar and my current battery bank. I never had to turn on my converter all summer getting 100% of power for the fridge from solar.
JC Refrigeration also sells one with a 120v compressor.

There's an Amish company that makes cooling units to replace the garbage that's used today. I purchased a 12 volt dual compressor cooling unit from JC Refrigeration. Today my freezer is always -5 to 0 and fridge is always 33 degrees. I have almost 2000 watts solar and 600ah lithium batteries. I used around 250ah per day, but a lot of that is for the TV. If boondocking this does use a bit of power.
I highly recommend the JC Refrigeration. The challenge is to find someone to install it. I found someone in Yuma Arizona to do the install.
