Agree that is a propane line. Shouldn’t be a problem to disconnect the flex hose, with propane off and pressure relieved of course, and let the pipe drop down on the sewer line. You could even unscrew the cross over pipe from the pipe fitting on the left of the picture and remove the pipe. But that wouldn’t help much as the sewer pipe is still there. Pipe fittings are pretty foolproof.

You might find it at your local hardware store.
I would guess the red 10 gauge wire is solar feed from the roof (if you rig is pre-wired for solar) OR, 12vdc supply line from the truck to your house battery. You could put an ohm meter on it and figure that out before you repair the wire.

I doubt it's solar for a couple reasons. First they come in pairs, red and black, second they need to go shortest route which means through the roof and down an interiour wall, or down the fridge stack, or down the factory installed gland.

Is your 12 vdc fuse panel toward the rear of the trailer? Large red wire could be from battery to fuse panel if it is located toward the rear.

What's the best way to "relieve the pressure" from the propane pipes after shutting off supply?

And no, the only fuse panel I'm aware of is the one towards the front of the RV with all the breakers, etc., so I don't think that red wire has anything to do with that.
Also, I just realized another big question... Do I need to disconnect that battery and disconnect from shore power while I'm repairing the brake light wiring? Pretty sure it's only powered when plugged into the truck through the 7-pin connector, but just want to make sure!

Correct re 7-pin.
As far as big red wire, do you have some sort of large DC load back there, maybe a power reel for your shore power?

Is it really Red or maybe Dark Orange?? If Orange it might be a Coax line.

If it's orange, it could also be a hydraulic line. I do see something that looks like metal where the critters chewed through. Double check that and maybe a better picture or two.

Good eye. Zooming in it does look like metal flex pipe under an outer sheath.

Yea I need to get a better look/take pictures in the daylight tomorrow, but it does seem a little too small to be a hydraulic line (and I can see what looks to be bigger black hydraulic lines running along the same route). Also, I did just noticed that it's also a flat/more rectangular shaped wire like a TV power cable...like this:
