Sweet and Sour Chicken
3 boneless chicken breasts or 6 chicken tenders
1 medium bell pepper, cut in medium pieces
1 medium onion, sliced thinly
1 small can pineapple chunks
Cut chicken breasts in bite size chunks. Salt and pepper chicken and dredge in flour. Pour a small portion of olive oil or vegetable oil in skillet and heat. Cook chicken until it browns and then pour vegetables over the chicken and stir.
Sweet and sour sauce :
1/2 cup brown sugar
2 TBSPs. apple cider vinegar or white vinegar
3 TBSPs. ketchup
3/4 cup water
2 TBSPs. cornstarch.
Mix ingredients and cook over medium heat while stirring...you may have to use a whisk to get the lumps out of the cornstarch. The sauce will thicken immediately....remove from heat and pour over the chicken mixture. Heat through and serve over rice.
An easy recipe to prepare...I make this a lot and it doesn't take too long to fix it. It is tasty and hearth healthy.
