The number of batteries that you need to run an AC any length of time would be extremely heavy, reducing the carrying capacity of the RV. You need to keep all those batteries charged, and a solar system that can do that would also add to the weight.

Can you do it? Sure. Is it practical? Probably not.

Solution? 1) If you need AC stay in parks with power, 2) use a generator, 3) don't go to places that are so hot you need an AC.

Rainer, that is pretty much what I have decided I will do! The park thing isn't going to work, I like my space so a gen or two will prob be the way I roll!!! Thanks again everyone.
