Any ideas on hot water issue?

Have a 2020 Keystone Montana 3760FL and Having issues with hot water being Luke warm on ALL outlets. Any ideas would be greatly appreciated. Below is what I have already done/checked.
1.) Outside shower outlets off
2.) Replaced bypass valve
3.) double checked routing of pex hoses to original and other photos/diagrams posted on this site.
4.) Water is hot coming out of tank so it is mixing somewhere
5.) had an issue with back flow valve at end of last season, hot water worked fine then, techs fixed that problem but now have this one.

Have you checked to see if the bypass valve isn't installed backwards?

Either the bypass valve or the back flow valve are installed backwards would be my guess.

I believe it is installed correctly. When I turn it to bypass, all the water goes real cold, so it’s definitely turning off the hot water, but that’s not to say it was plumbed correctly. It would be great to get a picture of the back of the convenience panel from the same model or at least year, or close to it.

The back flow valve could be the issue. As at the end of the year last year when I was winterizing there was still a bit of antifreeze coming out of the hot water heater even when the bypass was on.
