The outlet of the pump is pressurized from the city line at all times, not the inlet side. If the check valve in the pump is not working correctly, it will allow water to flow back thru the pump, and fill up your fresh water tank.

In the attached picture, the white lines indicate the input side, and I believe that you can see that they are actually hooked up to your fresh water tank.

Very flexible can be subjective. It takes about 6"'s of pex tubing to make a sweep 90. Reference your own picture and look at the blue pex that you placed the red arrows on. That black bracket that the pex is attached to is a sweep 90. Any bend much tighter than that will kink the tubing.

Pex is far more flexible than PVC. Short pieces will feel stiff. If you heat the Pex it becomes pretty flexible, but not like your stainless braided hose you used. Not nearly as expensive either. That is Pex in your pictures.
