please help a newbie

We have a 2002 3670 RL which we bought new. We made one trip with it and have settled for a while. We want to know what to check, how often to check it, and where can we get help. I have never checked the water heater or know how to do it, I have never greased the wheel bearings and want to know if I can do it or do I have to have it professionally done. We did not turn off the water heater or the gas on our trip. I am not even sure where to do that at. Should we turn off the refrigerator while on the road?
