1 Tbsp. shorting
1/4 cup chopped onion
1 (12 oz.) can corned beef
2 cups tomato juice
1/4 cup vinegar
1 Tbsp. sugar
1/4 tsp. thyme
Dumplings:
2 Tbsp. shortening
1 cup sifted flour
1/2 tsp. salt
1 1/2 tsp. baking powder
2/3 cup milk
1/4 cup shredded cheese
Pan fry onion in 1 tablespoon shortening in a heavy skillet. Add corned beef. Break into small pieces. Add tomato juice, vinegar, sugar and thyme. Cook over low heat while preparing Dumplings.
To make Dumplings, sift together flour, salt and baking powder. Cut in 2 tablespoons of shortening until mixture is the consistency of coarse corn meal. Add milk; stir until just blended. Drop dumplings by spoonfuls into hot corned beef mixture. Sprinkle shredded cheese on top. Cover tightly. Cook over low heat for 20 minutes (do not peek). Uncover, serve from skillet. Yield: 4 serving. (Note you could use Bisquick Dumpling recipe)
