My batteries

If my batteries would fail and I’m hooked into a Rv 50amp electrical source, would my slideouts still operate

Maybe. If the converter can keep up with the needs of the hydraulic pump it may work but usually, you need the reserve power from the battery to handle the surge of the pump. If your battery fails while plugged in, you probably have an issue with the converter that isn't going to help with the slides.

I believe you can also run your hydraulics off your truck umbilical cord.

If your RV batteries are dead, you can use jumper cables from your truck directly to the house batteries to move the slides or landing gear.
The hydraulic system pulls a lot of amps. Your converter or 7 way cable may not have enough amps to do it.
