Wisconsin to Tennessee

We are planning to travel from Western Wisconsin to Kentucky and Tennessee the week before July 4th. We are thinking of doing some 4-wheeling in that area. Any suggestions on where to go and stay? Is this a good time of the year to do this or will it be too hot and humid? We've not spent any time in that part of the country and aren't sure if this is a good idea or not.

I assume the Pigeon Forge and Gatlinburg area will be very busy at that time.
