Jellied Macaroni Salad

This ia a good recipe to make up ahead of time. I like to prepare some foods at home before we leave on a trip so we will have them to eat on the way and this is a good one for this. I copied it from a very old book.

Jellied Macaroni Salad
A great side dish.

1/2 cup diced celery
2 hard boiled eggs.. chopped
1 cup cooked elbow macaroni
1 small onion, chopped (about 1/4 cup)
1 small chopped dill pickle.(abt 2 tblsp)
2 tablespoons diced pimiento
1/4 cup mayonnaise
1 tsp salt

Mix these ingredients together and chill.

Dissolve one (3 oz) box lemon flavor gelatin in 1 cup boiling water.
Add 3/4 cup cold water. Chill until slightly thicken.
Add to the other ingredients and place in a mold/molds.
(You can use a bowl and serve from it without molding.)
Chill until firm. About 3 hours. Unmold and garnish as desired.
Makes 3 cups or 6 servings.
