Appetizer Meatballs
Appetizer Meatballs
2 lbs. ground beef
1 pkg. frozen chopped spinach, cooked & drained
1 yellow onion, minced well
2 eggs
2 teaspoons salt
6 Tablespoons cheddar cheese, chopped
1 cup flour (approx)
Mix all ingredients together. Make tiny balls and roll in flour.
Brown gently in oil, and drain on paper towel lined plate.
SAUCE:
6 tablespoons white vinegar
2 teaspoons of prepared mustard
2/3 cup brown sugar
6 tablespoons catsup
6 tablespoons butter
Mix sauce ingredients together and heat.
Add meatballs.
NOTE:
I always double the sauce recipe.
The sauce is best after a few hours. Excellent to make a day ahead of serving.
