The white little panel controls your Fantastic exhaust fan, the large rocker switch should be your ceiling fan, the small black switch is your slides in and out, the ceiling lights, the flood lights are the round lights up high outside on both sides, and the porch light next to your door. You should have a cover plate around that switch for the ceiling fan so someone, maybe a kid, doesn’t poke something into the gap around the switch.

To expand on what Bob said. On the Fantastic Vent panel, the first push button switch on the bottom toggles between Auto, Manual, and Off. In Auto you can use the up/down arrows to select temperature. In Manual those select fan speed. Of course the temperature is dependent on the temperature of the outside air coming in.
