I picked up a 2 1/4” diameter 3/8” hole rubber washer @ Lowe’s hardware section that works for me. (Hillman #215685)

The refrig door open over the lock wheel? Really?? Wow, I would have NEVER guessed that would or could happen! Unreal for sure, the camper Gods must be very angry about something! Is there something defective about the frig door, I just cannot see how that could happen, that is a huge knob. I like the idea of adding a huge washer like stop gap and will looking into that idea for sure.

Yeah, I feel your pain... somehow on my last travel day I had stopped and grabbed something out of my fridge and never reinstalled my screw knob. $32 worth of Heineken bottles pushed away my horizontal brace and out the door they went. What a mess I self inflicted on myself...😥 and of course after cleanup I was out of beer...
