Question about jacks lifting the wheels
I just re-leveled and find the wheels off the ground on one side. The rig is solid and stable but is that ok to do?
If it is ok, I'm wondering about tire replacement, is it acceptable to use the jacks to change a tire on the rig?

IMHO yes, We can't always find a real flat area to level up on. As for the changing of tires, as long as all things safety are followed. Like blocking the other tires, keeping your body out from under rig, etc. Common sense is the name of the game. Again Just my opinion.

yes, your tires can come off the ground. lots of threads on that.
as for changing your tire, lots of us do it that way but it isn't recommended by lippert. Use common sense.

We have spent the whole winter before with wheels off the ground and yes I have used them to change tires.

Mine is always stored inside with the levelers holding the tires slightly off the ground. Last year while I was undergoing cancer treatments it spent the whole year suspended on the levelers. It did not cause any problems, and didn't drop even a fraction of an inch.

If you kook at the specs on the leveling jacks...14,000 lbs per each front and 8,000 lbs per each of the rear jacks...lifting capacity is not an issue. Many a time with wheels off the ground due to less than stellar rv site grading or early on due to the marathon tires blowing out their whole sidewalls.

I have a lot more confidence in six fixed hydraulic jacks versus one bottle jack that I have to place under the trailer on the side of the road to change a tire.

All good. I have been in places where both wheels on one side are 2 inches off the ground . No issues
