Easy Taco Soup Recipe

Fall is in the air and I thought this would be a good recipe to share with my Montana friends. Soooo easy to fix and it was delish!!!

Taco Soup
1lb Hamburger, browned and drained
2 cans Black Beans Drained
2 cans Whole Kernel Corn Drained
1 can Rotel diced tomatoes with Green Chiles
1 can diced tomatoes
1 envelope Taso Seasoning,Low Sodium
1 envelope Fiesta Ranch Dip

Combine all the above ingredients in a large pot. Add water to cover ingredients. Simmer for an hour or two on top of stove. (can also be made in crockpot)

Top each bowl with:

Shredded cheddar or Mexican blend cheese
Taco chips or tortilla chips
Sour cream (optional)

I made this for the first time today. It was so easy to put together, I figured it would fit into the RV lifestyle very nicely. It was very tasty and I have lots leftover. Hope you enjoy it!

I make this soup on a regular basis...almost the same recipe( although red beans(kidney) is in mine...Depending on the company coming I might add a second helping of the taco seasoning....Great soup and a warmer upper on cool days.

Soooooo, how do you get the soup to stay in the taco shell???? Sorry, couldn't resist, boring day at work, mind wandering as usual, with strange pictures of soup in a taco shell embedded in my head!!Hee Hee!

I have one very much like this but I use pinto beans and ground turkey instead of hamburger.. It gets raves every time I make it.. Mine also calls for a jar of salsa where I go with either hot or mild depending on who is eating it that time...

Helen, I was thinking maybe salsa would be good in this, so next time I'll try it. I only had 1 can of black beans so I did use a can of pinto beans that I had on hand. I copied this recipe as it was written, but I always tend to make some changes. Al says I never make the same thing the same way twice.
