Smoked Peach Cobbler

1 cup all-purpose flour
1 1/4 tsp baking powder
1 tsp.nutmeg; grated
1/2 tsp.salt
2 tbs.butter, softened
1 cup sugar
6-8 peaches, peeled & sliced
1/2 cup brown sugar
1 tsp almond extract
1 cup boiling water

In small bowl, combine flour, baking powder, nutmeg & salt and set aside. In a large mixer bowl, cream the butter, add 1/2 cup sugar and blend well. Beat in the flour mixture. Oil a 9" square pan(or disposable aluminum pan) and place half of the peaches on the bottom. Sprinkle half the flour mixture over the peaches. Add the rest of the peaches and then the rest of the flour mixture. In a bowl combine the remaining 1/2 cup of granulated sugar and the brown sugar. Pour over the top of the pan, do not mix. Sprinkle with additional nutmeg. Put in your cooker or grill (at about 350 degrees) with your choice of smoking pellets flavor and let cook (without peeking) for 1 hour. Wonderful warm with a scooop of vanilla ice cream.

Tip: If your cooker will not hold a constant temperature, cook with smoke for 15 minutes and move to preheated oven at 350 degrees. You can also omitt the smoke and just bake in the oven for 1 hour. NOTE: PEACHES NEED TO BE FRESH, NOT CANNED.
