cooking pheasant breasts

I've always had a hard time cooking pheasant until today.
A frind suggested using the "George Forman" instead of the grill. I tried it and I'm surprised no problems.

If pheasant is too gamey try letting the breasts sit over nite in a pan full of Itailian dressing making sure the breasts are totally covered. Gamey taste is reduced. The dressing has all the seasoning already added so no fuss no muss. Itailian can be replaced with others or wine of your choosing. We just used a new vinaigrette (red wine). This is fast easy and finished in 10 to 15 mins. Add in some veggies and a potatoe or 2 and your done.

Another great marianade for beef, pork or poultry is balsamic vinegar. Can't say I've ever used it on pheasant, but it may be worth a try.
