Southern Fried Cornbread
1 or 2 cups Corn meal (If you can get self-rising corn meal that is what I use) If not add 1 tbs. bakin powder and some salt. Boil a small pot of water. Add Water a little at a time untill corn meal is wet but not runny,it must be stiff. Put about 1 inch of cooking oil in frying pan, take 1 large Tsp. of corn meal mixture and form a pattie with your hands.(careful mixture is warm) put pattie in hot oil and fry till golden brown on both sides. This is the corn bread that is good with Cowboy beans..
