I've not experienced this but I do have auto AC knowledge. A low charge wouldn't cause freeze up. Quite the opposite. A low charge would never get cold. Typically freeze up would be caused by a faulty evaporator core thermostat. It won't shut the unit off, it simply stops the flow of freon until the core temp drops. There can only be a few things shutting off the AC unit. An over pressure switch, the wall thermostat, the power source or the control board in the AC itself. If you have 2 AC units maybe swap the thermostats? It's a start but it sounds like something for a qualified tech.

My original and recent replacement Dometic AC, model 641916AXXIJO, always short (for lack of a better word) cycles, but I've been told it's the thermostat. My understanding is the Micro-air thermostate fixes it.
