Welcome to the forums and congrats on your new purchase. Lots of folks turn usable space into office space in their campers. I see no reason why you cannot do it too, especially if you don't use the bunk area for anything. Just remember, these campers were built from the inside out. That means all the inside built in furniture was put in first, and then the exterior walls went up last. With that said, removing some portions (screwed from the outside direction) may be a challenge to remove. But all the interior stuff should remove pretty easy. You may find it easier to just leave the framing supports attached to the walls for the bunks then try to remove them. Then you could potentially use them to create office furniture from. Anyway, it's something to consider.
We are doing about 50/50 work from camper now. Wherever we have cell phone service, we have internet, and we're connected to our companies. This year already, we did January and part of February in Alabama. We spent all of April in North Carolina, and this Friday we are heading out across Indiana (a few state parks one week at a time), and at the end of May, we may not return home then either, but head to Missouri to the Ozark area.
