Crab Stuffed Potatoes
5 med. Idaho potatoes
1 C. crab meat
8 oz. butter
1/2 C. light cream
1 tsp. salt
4 tsp. onion
2 C. Cheddar cheese
1/2 tsp. paprika
1/4 tsp. white pepper
Bake potatoes until tender. Cut lenghtwise and scoop out pulp. Whip togeather potatoes, butter, cream, salt, pepper, onion and cheese. Add a little more cream if necessary. With a fork, mix in crab meat and refill halved shells. (The extra potato is to ensure plenty of stuffing.) Sprinkle with paprika and reheat in a 400 degree oven for about 15 mimutes. Makes 8 servings
