Those devices that have the red covers on them are the breakers that are being discussed. Not sure what happened with your battery box being crammed against the back wall and one of the breakers, but which ever breaker has a cable going to your hydraulic pump, is the one that would be replaced. The device in the photo is a breaker without the red insulating cover.

There are several electrical wires coming off the breaker I want to upgrade including the cable to the hydraulic pump. I'm concerned about raising the breaker amps to those other areas not knowing what all they are. Would running a separate cable from the battery through my new 80 amp breaker to the pump while leaving the other wires on the smaller breaker make sense?

Yes.
Or you could just tap the hot side of the existing breaker with a short lead to the new breaker.

If you are replacing the breaker on the left, the small black wire and small red wire already have in-line fuses in those wires (the black thing behind the red wire at top of pic and the red one near the bottom of the picture). Those wires are effectively wired direct to the battery (since the are connected to the line side of the breaker) and are already fuse protected. So put the wires on the new breaker just as they are on the old one.

This is a photo of where my 80 amp breaker was installed, and you will see a small breaker next to it, but that breaker has never had a problem so it wasn't changed.

I am having trouble finding an 80 amp breaker-----can a 100 amp breaker be used?? or a 70 amp?? I can find those---------

If your can’t find the 80, go with the 70. Most likely adequate anyway. Wire size not likely enough for 100.

I have been testing it I cleaned and tightened all the connections so The problem is not corrosion on the connections, and I hooked up the truck with its 2 big batteries with the engine running and it still stops going IN. Funny how it does not stop going out!! I was thinking that the 70 amp might be sufficient also--------

Install business bars.
Buy a couple of Bussmann 50A self resetting circuit breakers for spares for when the red ones fail.
