Turn off fridge and charge batteries

If I disconnect my batteries in outdoor storage will they still fully charge and just stay in float mode until I turn them back on? How do I leave the inverter on and manually turn off the fridge?

Your question is unclear. If you use the battery disconnect, the solar charger is still charging. It's automatic and will provide whatever the batteries need, be it bulk, absorption or float. Why would you want to leave the inverter on? If you don't want the fridge on just turn off the the inverter disconnect.
