I had time today to mess around with the camper at home. Sure enough, I was able to fill the tank with the existing water pump. Only thing I did different this time was use much shorter hoses. I may have been getting air somewhere as well the first times I tried.

If anyone needs details, let me know and I'll post up connections and valve positions that will allow you to fill your fresh water tank using your existing water pump.
