Water in diesel

In January this year I had fuel filter changed on my 2014 Chevy 3500 SRW with about 98k miles on it...just routine. About a week later I was passing a car and kicked in the turbo to pass the guy, and saw a puff of white smoke come out of tailpipe that looked strangely like steam. It WAS steam! Days later got message in DIC “water in fuel”. There was a couple of possibilities where I got it - both were chevron convenience stores off freeways. Took it to the dealer and had to get another fuel filter. A few days later check engine light came on and the DEF tank heater was out, which requires complete new DEF tank for $1100 (truck was 825 miles out of the 100k warranty). This was not related to the bad fuel but still rubbed me the wrong way. DW and I decided to pull the trigger and traded it for a 2019 DRW in late February. I have been driving a diesel since 2005 and that was my first and only time (that I know of) that I got some bad fuel.
