Storage is easy. On my older fridges there was a little tiny lever that you could use your thumb to push open and it would hold the door slightly open. The lever was on the inside edge of the door handle. If the new ones don't have that then I'd put a small piece of wood on the shelf that would keep the door slightly open. We've never moved a rig without stuff in the frig so I can't help you there. We've had to add magnetic strips to our 2017 to keep the frig door shut on rough roads.
