In our rig, the fridge has an empty space below it that has a panel that can be removed by removing four screws. In that space there is a transition connector between the flexible power cord that comes up from underneath and the Romex that goes to the receptacles in the slide. There have been instances where that transition connector has failed, sometimes bad enough to nearly cause a fire. I don't have any photos of under our fridge, but it would be a good place to check if your installation sounds similar.
