I can't see why a piezoelectric or battery powered spark ignition wouldn't work. Holding in the button in the pilot position ensures a flow of gas until the thermal safety opens with the heat. I suppose it is a safety issue because the pilot is not readily seen except when bent down looking in the stove. This could be solved by putting an enlarged hole covered with a concave pyro-glass site though the burner cover directly over the pilot. A lit pilot would then show as a bright blue light easily seen from above.
