Folks in our Snowbird park who leave their rigs closed up all summer in Florida heat and humidity do not generally have mold issues. If a mold issue occurs, it is tied to a leak somewhere. Some lay pans of charcoal and kitty litter inside, but most do nothing. Maybe since you have power you could run a dehumidifier inside the rig and drain it to one of your tanks.
