Don't know how bad your wife's back is with arthritis, but the visitor center on the south rim is hand-cap accessible. We stayed at the Grand Canyon Railway RV Park and took the train ride to and from the rim. There is no reason why you couldn't bring a wheel chair if that would make things easier, and you can get to most of the things to see. You will have a few hours there before the train leaves to go back to Williams, and we found that plenty of time to visit.
