For us red chili, cayenne, cumin and/or Hatch green chilis are great cooked correctly....and yes, I cook with them all the time (have a bushel sitting in my freezer). On the other hand, cooked a pot of potato/chicken, cheese, bacon, cream and green chili soup the other day, very mild, and my GDs boyfriend (from FL) said he couldn't eat it....it was too spicy (family favorite) - I thought I had pretty much washed the chili flavor out. Taste is a very subjective thing; if one is interested in local flavors I would recommend La Posta personally - very popular...until the "shutdown" in NM .
