Freezer bags for sure. Here is the recipe and directions I got a couple of years ago at one of our rallies:

BAGGIE BREAKFAST OMELETS


2 or 3 eggs beaten like you would do for a scramble. After you have beaten the eggs, pour them into a QUART size Ziploc freezer bag. IMPORTANT: Make sure to use a FREEZER BAG or the bag will melt when you place it in the boiling water!!!!
Add your favorite ingredients to the eggs just like you were making and omelet (sausage, bacon, peppers, cheese, mushrooms, etc.) Once all of your ingredients have been added, seal the bag and mush everything around to mix the eggs and your fixen’s. After everything is mixed up open the bag to remove as much air as possible.

Re-seal the bag and drop it into a pot of boiling water (12 minutes for 2 eggs, 15 minutes for 3). If you are making breakfast for more than one person it is a good idea to label each bag with the person’s name. An 8 Qt. pot will fit 6-8 bags at a time.

When cooking time is up, remove the bags with tongs, open them up, dump your omelet onto your plate and ENJOY!
