Snickerdoodle Muffins
1 1/2 cup self rising flour
1 cup oats
1/2 cup sugar
1 egg
4 TBSP. butter
1 tsp. vanilla
1/3 cup sugar
1 tsp. cinnamon
1 cup milk
1. Mix dry ingredients together.
2. Mix egg, butter, vanilla and milk together.
3. Add to dry ingredients and mix well.
4. Pour mixture into muffin tins about 2/3 full. Bake at 350
degrees for 12 to 14 minutes.
5. Mix topping...1/3 cup sugar
1 tsp. cinnamon
Brush muffins with melted butter before putting on topping.
6. Add topping after removing from oven.
A good recipe for anytime...especially for breakfast or a snack with coffee in the afternoon. Enjoy!
