Snickerdoodle Muffins

Snickerdoodle Muffins

1 1/2 cup self rising flour
1 cup oats
1/2 cup sugar
1 egg
4 TBSP. butter
1 tsp. vanilla
1/3 cup sugar
1 tsp. cinnamon
1 cup milk

1. Mix dry ingredients together.

2. Mix egg, butter, vanilla and milk together.

3. Add to dry ingredients and mix well.

4. Pour mixture into muffin tins about 2/3 full. Bake at 350
degrees for 12 to 14 minutes.

5. Mix topping...1/3 cup sugar
1 tsp. cinnamon
Brush muffins with melted butter before putting on topping.
6. Add topping after removing from oven.

A good recipe for anytime...especially for breakfast or a snack with coffee in the afternoon. Enjoy!

I have a good recipe for oat bran muffins, and this one is very similar to it ...I haven't made it yet, but intend to soon. It sounds very good to me and isn't too sweet and not full of the bad calories that most of us are trying not to eat. Hope that you all enjoy them.
