Roasted Sausage with Tomatoes and Cannellini Beans

Last night Joy Thompson treated us to her Roasted Sausage with Tomatoes and Cannellini Beans and everyone was raving over it. Thank you Joy for the wonderful meal.

You can find her recipe on page 88 of the MOC Cookbook 2009.

Here you go Helen, hope Joy doesn't mind! Please excuse my fatfinger typing.

Roasted Sausage with Tomatoes and Cannellini Beans
Joy Thompson

1 pound Sweet Italian Sausage Links
3 tablespoons extra-virgin olive oil
1 ˝ tablespoons balsamic vinegar
1 pound Polska Kielbasa Sausage Rope
2 teaspoons dried thyme leaves
1 pound “lil smokey joe” sausages whole
2 whole bay leaves
3 pints Cherry tomatoes
Salt and Pepper
1 Medium-large onion
3- 16oz cans of Cannellini beans, drained, cut into 1-1/2 inch chunks
(reserve ˝ cup of liquid from beans
4 garlic cloves, sliced

Preheat Oven to 425*, roast on lowest rack in oven.
Mix everything but the beans and their reserved liquid in a roasting pan.
Set pan in oven. Roast until sausages are brown and tomatoes have reduced to a thick sauce. About 45 minutes. Remove from oven, stir in beans and reserved liquid, and continue cooking until casserole has heated through, about 10 minutes longer. Remove bay leaves and transfer to a large serving bowl. Serves 8-10 people.

Thanks guys, I'm glad everyone liked it so much.
The only thing is, that I kinda changed the original recipe when I made it the other night. I used probably 6 different kinds of sausages, didn't have any cherry tomatoes so used Romas, and had the sausage already precooked before putting it together. Also, I had a Wild rice and Vegie sidedish that tasted real good when mixed with the "stew". So.... good luck, as you can see, it's easy to create your own recipe.
