Maybe silly question

When you stop for the night do you always have to unhitch? Can you put the slides out and and just leave it hitched to the truck so you can get away quicker in the am? We're new at this and didn't know. Will the refrigerator run even if you're not perfectly level? Maybe when we get home from this next trip we will know a little more and won't have to ask so many questions. Thanks
