Kitchen island cutoff

Just wondering if anyone has cut off the corner their kitchen island top.

On my 2880, the corner of the island counter keeps the refrigerator door from opening when the kitchen slide is in. I am temped to cut off the corner of the counter overhang (about a foot diagonal). Not being much of a woodworker, my wife is afraid this will end up looking like most of my other projects. (Hey, they may not be pretty but they work.)
Anyone tried this.
