Fast and Fabulous Corned Beef
For Corned Beef and Cabbage lovers I always get raves when I make this super simple dish.
1 2lb pre-cooked Mosey's corned Beef *
1 large package of coleslaw mix
1 large sweet onion roughly chopped
1 15oz can of diced tomatoes
Line a 9X13 pan with heavy duty foil.
Add part of the slaw mix and onlon to the pan. Next place the corned beef over this in the center of the pan. (reserve liquid in the bag) Add the rest of slaw mix and onion, completely covering the corned beef. Pour the canned tomatoes and reserved liquid over all. Cover pan tightly with foil and bake at 350 for about 1 1/4 hours. (Or until the cabbage and corned beef and are tender)
* I use Mosey's because it is consistantly tender and not fatty.
Cooks notes:
For carb lovers and hearty eaters I will add small new potatoes and baby carrots and make cornbread. You can also add two corned beef's to the pan to serve more people.
