Heart of the South Fried Okra
1 lb. okra
1 C. cornmeal
2 slices bacon
Salt and pepper
Rinse okra and remove caps. Cut pods into 1/2 inch slices and toss with with cornmeal. Fry bacon at 365 degrees in electric skillet or on medium high heat in large heavy skillet. Fry single layer of okra about 8 to 10 min. or until golden brown of all sides. Do not overcook or okra will become to soft. Turn carefully. Drain on paper on paper towels. Sprinkle with salt and pepper. Serve immediately. (Note; Fry smaller okra whole.)
