Lone Star Scalloped potatoes

this is a very easy and good Dish I made today:

1 1/2 cups Velveeta Cheese diced. place in large Sauce pan with 1/2 cup Chunky Salsa (mild, medium or hot) and cook, stirring often until cheese melts

Add 4 cups of thinly sliced raw potatoes and 1 tsp parsley flakes. Mix together

Preheat oven to 350 degrees. Spray 8 x 8 inch pan with olive oil flavored cooking spray and pour above mixture into pan. Cover and bake for one hour or until potatoes are tender. Place baking dish on wire rack , uncover and let set for 5 minutes.

We're buying groceries today, so I was glad to find your recipe before we went to the store. Those potatoes will show up on our table sometime this week! Thanks for sharing.
