Margee, I thought the same thing about taking potatoes to the Buellton Rally and being enough for that many people, but guess what, I had some left over!! But then, there was a lot of food and I doubled the recipe!

Oh, great Amy, Thanks for the diced tomatos and I'll probably put you on the cooking line with Mariana. You two had the system down to a finely honed knife. Hope you wouldn't mind doing that again, if so let me know.

GofNuts, you cannot have too many potatoes! It just won't or Can't happen!
It was our first experience with this process in Buellton and we were really impressed. One of the easiest most fun and delicious breakfast fixings we've seen. Looking forward to the same in Shasta.
