Polishing the woodwork

Hi All:

DW wants me to polish the interior woodwork on our 2013 3800RE Hickory addition. Not sure what polish to use. We winter in Arizona and summer in Alberta, Canada. Very dry in Arizona so need protection. This is the first time I have applied polish.
Thanks for suggestions.
