LP Gas question

Hope you all had a nice Thanksgiving,
We are living in our 5er for several months now and this will be a new experience spending a winter in it even though we are in Louisiana. We bought an extra lp gas tank so as to not have to make so many trips to get refills. Now we always have a full one on standby. I think because we cooked a small turkey it helped cause the following. My question is, how do you know when the tank is almost empty so as to avoid what happened the other night where we ran out of gas in the middle of the night and I had to get up and switch over tanks when it got too cold for the wife. Then the dogs want to go out because they think its time to go out when ever I get up. Also I wasn't sure if the center valve position was meant to use both tanks at the same time? Is running out of LP in the middle of the night something you just have to learn to live with?
