TACO SOUP

I haven't posted a receipe for so long.
I made this last night & it is so fast,
easy & delicious that I had to share.


TACO SOUP

Brown & drain grease:

1.5 lbs Ground Beef
1 Large Onion

Mix in remaining ingredients & simmer for 30 minutes:

1 Can Diced Tomatoes
2 Cans Rotel Tomatoes
1 Can Cream Style Corn
2 Cans Pinto Beans
1 Pkg Taco Seasoning Mix
1 Pkg Ranch Dressing Mix

Serve with grated cheese & a scoop of sour cream on top.

Yummy !!!!!!!!!!!!!!!!!!!!!!!!!!

Lisa, we tried taco soup about three years ago at a Relay for Life event, got the recipe and love it! Tastes great over the camp fire in an iron pot, but then again, so does everything else in that pot!

Not bad at all,

But, take no offense, this seems a little to American-ized for this Metsican-Ahmerrican, so I would leave out the corn and the Ranch mix, and add a can or two of green chiles (maybe some fresh jalapenos or serranos for the iron-stomached), and add homemade corn chips to the toppings... Aye Caramba!

But for those of you who like it just the way it is, you can still add some home-made tortillas chips. Here's the easy recipe:

Crosscut some corn tortillas in eighths or sixths. In a skillet heat enough of your favorite oil to cover the bottom about 1/4" (or use a deep fryer). Gently place the tortilla pieces in the oil and fry until crisp - if the skillet is shallow you might have to flip them carefully. Remove to drain and if desired, sprinkle with salt. Let them cool a little bit and top on your soup or treat them like crackers.

For a lower-fat alternative, layer the tortilla pieces on a baking sheet and spray both sides with your favorite spray (like Pam). Then put into a preheated 350 degree oven for just a few minutes (altitude, ovens and sheets will vary) so watch them close for just when they start to crisp up. There is no need to flip them. That's it!

Nothing like some hot soup on a cold day or cool evening! Viva MOC!

No offense taken. There's always more ways. Thanks for your
addition. Actually, when I was at home, we always made our
own tortilla chips just as you describe. Everything is better
from scratch!

I had stopped at the store & got the things I needed from
the receipe on the way home & made it as is. It was really
good, but next time, I'm sure I'll make a few adjustments!
