Red Velvet Cake
3 cups plain flour
2 cups sugar
1 1/4 cups Crisco oil
1 small bottle red food coloring
3 eggs
2 tsp. vinegar
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla flavor
1 cup buttermilk
-Icing-
2 (8 oz.) pkgs. cream cheese
1 stick margarine
2 boxes confectioners' sugar
2 tsp. vanilla
2 cups chopped pecans
Combine all cake ingredients. Beat mixture until smooth. Pour into 9 inch cake pans; 3-4 layers. Bake at 300 degrees for 30-35 minutes or till done. Icing: Mix ingredients until smooth. Stack each layer with frosting between each one.
