If your brake pedal bottoms out trailer or no trailer you have a problem! Find a new mechanic

Potentially brake booster issue...not safe, agreed on finding a knowledgeable mechanic.

I would check the Brake Fluid first to make sure you have the proper amount of fluid.

The brake pedal should never go to the floor, definitely something amiss.

That's only one problem. If you're pulling with a 3/4 ton RAM, that's a heavy trailer!
I have a 2019 3791RD and I'm at 15,600 lbs.

My RAM 2500HD is supposedly rated for 16,400, but the payload cap is 2,950. The 3790 has a pin weight somewhere around 2,700, which only gives you 250 pounds left for passengers gear and fuel.

The OP's trailer is 16,600gvw. At 21% pin @ gvw would equal 3652lbs. which will be more than the payload of the 3/4 Laramie. At 23% = 3818. Empty weight which it can't and won't be is 13,950 @ 22% = 3069lbs. Maybe the brakes have finally said "I give" after trying to stop that much? A trip to the scale would be highly recommended.
As far as the brakes I had a new SUV do that a couple of times at startup - very disconcerting. It never did it again. You said it was after a trip so I assume immediately after. Did it happen only once? Was it a hard trip (braking)? As others mentioned you need to look it all over then have someone very knowledgeable check it out. As I'm sure you know brake failure with that big of a trailer behind you will not be fun.
I take my vehicles to the dealer any more so don't tear into them anymore but I'm wondering if there isn't some sort of computer interaction with the brake pedal/feel that might be affecting it in some way?

Doesn’t that Dodge use the steering hyd pump for the brake pressure assist. My 99 gas one ton and 2006 2500 does. Make sure you have adequate steering fluid if that is the case. There was an update on my 2006.
