Sour Cream Potatoes (AKA: Cardiac Potatoes)
Sour Cream Potatoes
Excellent side dish to steaks, meatloaf or chicken. A favorite at our house.
6 medium russet potatoes
˝ cub of butter, melted
2 to 3 cups of grated Cheddar cheese
˝ cup of green onion, chopped
2 cups of sour cream
salt & pepper to taste
Boil potatoes until just tender.
Cool and then peel the potatoes.
Grate the potatoes on coarse grater. (like a cheese grater)
Add the rest of the ingredients and mix well.
Put in 9”x13” casserole dish.
Bake uncovered at 350 degrees for 45 minutes to 1 hour, or until golden on top.
Can be made 24 hours in advance and then baked.
Leftovers make great potato pancakes the next day.
