Breakfast Casserole/Quiche/Frittata/Gluten-Free Breakfast

We are doing something new and trying out how
breakfast casseroles are received at a rally. They are notoriously easy to make. They can be assembled in crockpots and cooked all night. Or they can be assembled the night before in a casserole dish, refrigerated and then baked in the morning. There are a gazillion recipes available on the internet just by googling “breakfast casserole recipes”. Below are a few sites to get you started.
Quiche has been added to the menu as we have some gluten intolerant folks attending, (can't eat bread). Below is a link to a crustless quiche recipe site.

Do you make any gluten-free breakfast dishes? Consider bringing them to the breakfast. Anyone make gluten-free pancakes?
We have attendees who are gluten intolerant, some are diabetic and some have allergies to certains foods.
Please print out a list of the ingredients of your dish
whether it's homemade or store-bought and attach it to your dish.
If you don't list your ingredients, some of the participants will have to bypass your dish even if they didn't need to.
