Hitches

Hello again everyone, sorry if these 2 questions have been discussed ad nausea. The wife and I are picking up our new 3120rl soon. Once the shop is up basically.

I'm looking at air ride hitches ( the reason I say I'm looking and not we're looking, because... Well she doesn't need to know the price of said hitches lol)

So on to my 2 questions if I go with a 25k hitch I have 2 heads available Valley and the Holland/Binkley are there pros and cons to these or is it more of a personal preference?

Lastly how much "wiggle room" do you like with your hitch weight rating? The 3120rl is rated at 12k dry another 4k loaded with 2200lbs of pin weight. So essentially I could be pulling up to 16k lbs, is a 20k hitch enough or is it better to spend the extra coin and get the 25k hitch for good measure? I know to always keep in mind of upgrade, but I think that will be quite sometime down the road
